I love this recipe because not only is it super tasty but it takes less than 5 minutes to whip up. I’ve been vegetarian for most of my life but going 100% vegan has been a challenge for me as I’m a huge cheese lover. This cashew based queso recipe satisfies that cheesy queso craving and is packed with vitamins, minerals and antioxidants.

This queso packs a spicy punch. If you prefer less heat, simply add less jalapeño and cayenne or remove it all together for a creamy mild queso.

Required:
Blender

Recipe:
1/2 cup cashews
1 cup salsa
2 tablespoons nutritional yeast
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1/4 cup sliced jalapeño peppers
1/4 cup water (you can add more or less water to achieve desired consistency)

Add all ingredients to your blender and blend to desired consistency.

Enjoy with your favorite corn chips, on tacos/nachos, with cauliflower, over noodles, scrambled in eggs, over baked potatoes – the possibilities are endless! 💜
